Paleo & Vegan Chocolate Chip Cookies

Hey.

These puppies aren't a recipe of my own, but I tweak them a bit. The original is a recipe developed by Caroline at My Gutsy. Wish I could hug you, Caroline. These cookies are nothing short of amazing af. They are rich and gooey but hold their shape really well. I've made them three times in the last month...so...

Ingredients
1 3/4 cup organic almond meal (or flour)
1/4 cup organic pure maple syrup (or honey for non-vegan)
1/4 cup organic, unrefined coconut oil or butter (softened for butter, or melted for oil)
1/4 teaspoon sea salt
1/4 teaspoon baking soda
1 teaspoon organic, pure vanilla extract
3/4 cup dairy, nut and soy free dark chocolate chips (Enjoy Life Dark Chocolate Morsels are the best option for vegan and paleo friendly)

Directions
Preheat oven to 350 degrees. Line a cookie sheet with unbleached parchment paper, or oil the sheet with organic coconut oil or organic palm shortening. Mix all ingredients, except chocolate chips, together in a bowl. Then add the chocolate chips. Using a tablespoon, scoop cookie dough onto prepared sheet and keep a 2-inch distance between each cookie. Bake them for 6-7 minutes, and don't over-bake, because the cookies will be so soft 'n warm 'n good if you take them out after time suggested.
