Coconut Cocoa Balls

I've always loved grabbing a protein ball alongside a juice or tea from a local bakery or cafe. I also almost always crave something kind of sweet mid-afternoon, and a protein ball is the perfect go-to. However, one thing that I don't particularly like in a lot of protein balls is the use of oats, even if they're gluten free, because they don't sit well with me. I also don't eat too much peanut butter; I prefer almond butter, sunbutter, cashew butter and coconut butter. Simply, I just would rather make them myself unless I know exactly what's going into them and that they are ingredients that make me feel good!

For a while, I was making Lee Tilghman's Coconut Fat Balls, and although I still love her recipe, I've been working on a 'ball' recipe of my own for a couple months now and have finally perfected one that satisfies my sugar craving and gives me a little boost of energy. Lots of seeds, nuts and coconut...#YUM.

Coconut Cocoa Balls
makes about 10 balls
1/2 cup almonds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1 tablespoon cocoa powder
2 tablespoons maple syrup
1 tablespoon coconut oil, melted
1 tablespoon coconut butter
1/4 cup shredded unsweetened coconut
pinch of sea salt

In a food processor, pulse the almonds until they resemble almond meal (about 20-30 seconds). Add the sunflower and pumpkin seeds and again pulse for 20 or so seconds. Add the rest of the ingredients and pulse it all together until it reaches a consistency where you can easily roll the mixture into 1.5in x 1.5 in balls. Place balls in a glass container lined with parchment paper and refrigerate. They will last about as long as you let them...which won't be long ;)
