Vegan & Paleo Homemade Bread

To be honest, nothing looks better to me than a piece of bread smothered in almond butter and other amazingness. (Maybe a stack of pancakes beats this out, but still.)

As much as I like to eat breads and baked goods, I try to only eat them if they’re grain-free and egg-free. Otherwise, my stomach is like NOPE, and my digestion is out of whack. I’ve found (through the elimination diet and food-journaling) that my body just doesn’t tolerate grain well. And, because the majority of chickens (even organic, sustainably-raised) are fed a grain or starch-based diet (same with cows that aren’t grass-finished), I’m unable to eat eggs, chicken or other meat without having some sort of stomach issue (HALLELUJAH FOR WILD-CAUGHT FISH).

I’ve grown to love this though because it’s encouraged me to be much more creative in the kitchen! Also, nothing is better than feeling my best, and if that means having to nix a few things from my diet, then I am A-OKAY with that.


I’ve been looking all over the internet for a grain- and egg-free bread recipe, but each one that I’ve tried or played around with either hasn’t risen or doesn’t hold together. FINALLY, after a lot of research and some recipe-tweaking, I have developed a recipe for the kind of bread that I can smother with avocado, almond butter or coconut cream and homemade Nutella if I want to. It’s grain-free, egg-free and perfectly salty & sweet. I just baked a loaf yesterday and ½ of it is already gone. (Yours won’t last long either…)


Vegan & Paleo Homemade Bread

1 ¼ cup almond flour
¾ cup arrowroot powder
1 teaspoon baking soda
¼ cup coconut oil, melted
1 Tablespoon raw honey (can do 2 Tbsp if you'd like it a bit sweeter)
2 teaspoons raw apple cider vinegar
½ teaspoon sea salt
6 Tablespoons ground flaxseed (or flaxmeal)
½ cup almond milk

Preheat the oven to 350 degrees F.

In the bowl of a standing mixer, or with a hand-held mixer, mix ingredients until combined and smooth (about 1 minute).

Grease a small bread pan with coconut oil and pour the dough into the pan.

Bake the bread for 35-40 minutes. At the 35-minute mark, stick a fork or knife into the loaf and see if it comes out clean. If it does, then take the bread out.

Let the bread cool for an hour or so (HARDEST PART).

Enjoy with mashed avocado, almond butter and seeds, coconut cream and cacao nibs, hummus and cucumbers, etc. GET CREATIVE.
