HELLO HUMANS.

If I'm being honest, I ate 5 of these cookies the first time I made them, and then I couldn't fall asleep until 1am that night. So, if you plan on enjoying these, maybe do so in the early afternoon instead of the evening...or just eat them after dinner anyways. #whateverfloatsyourboat

It's hard to come across amazing cookie recipes that are both refined-sugar free, grain-free and egg-free. Frankly, a lot of them aren't very good or don't hold together very well. I have finally found cookie heaven though, and I will never look back! My favorite paleo & vegan chocolate chip cookie recipe inspired these babies...let me know if you enjoy them as much as I do!

Double Chocolate Chunk Cookies (Paleo + Vegan)
1/2 cup coconut oil, softened
1/2 - 3/4 cup coconut sugar (can do coconut sugar + maple syrup, 1:1 ratio)
1 flax egg (can use regular egg if not intolerant)
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon sea salt (plus more for sprinkle)
1/2 cup cocoa powder
1 3/4 cups hazelnut flour or almond flour (I don't recommend using coconut flour)
1/2 cup dairy-free dark chocolate chips (Lily's is an awesome AF brand)
1/2 cup raw chopped walnuts

Combine all ingredients in a mixing bowl and mix until dough forms. Roll dough into 1-inch balls and press down lightly with three fingers to flatten a bit. Sprinkle a touch of sea salt onto cookies. Bake at 350 degrees for around 10 minutes.
